Move over, cows! Savor, a California-based startup backed by Bill Gates, has found a way to make butter-like fat from just carbon dioxide and hydrogen. Starting with the idea that all fats are composed of chains of carbon and hydrogen atoms, Savor patented a thermochemical process to create dairy-free alternatives to milk, butter, cheese, and ice cream that taste just like the real thing. This process doesn’t release any greenhouse gases, uses no farmland, and requires less than a thousandth of the water that traditional agriculture does. So far, taste tests have shown that Savor’s butter alternative is almost indistinguishable from the real thing. However, the company faces regulatory hurdles before it can bring this innovative product to market.
